Cruiser and RV recipes (Saturday - May 01, 2010)

Black Bean SaladI've been collecting cruiser recipes since we've been cruising... mainly because my cooking expertise aboard a vessel needed major help! Not having the handy KitchenAid mixer, the Vitamix blender, the bread maker... well, you get the point and can imagine how lost I was. Top that with being in another country where you can't get your favorite ingredients and you can say I pretty much sucked in the galley. Thanks to many friends and fellow cruisers (and to my mother for leaving me all her past recipes), I am a pretty darn good galley chef now... if I may say so myself! I am in the process of compiling all these offerings and maybe if I'm real ambitious I'll publish them. And as we RV'd a lot before cruising (including a RV trip in Mexico down the coast as far as Melaque, Mexico), I believe these are great RV recipes, too!

I am always open to new ideas. What I'm looking for are tasty dishes that are conservative with cooking time (as propane is a precious commodity) or that are easy to prepare or that use simple ingredients. For example, roasted lamb that takes hours to cook in the oven would NOT be what I'm looking for.

Here is an example of the type of recipes that would be fitting. This is an awesome black bean salad recipe that my friend, Ann, gave me (she and her family, consequently, bought Windfall). It is super simple and everyone always raves!

 BLACK BEAN SALAD - Ann Brown, s/v Hana Crew - 35' Cal Cruising

  • (2) - 15 oz. cans black beans, drained
  • Fresh cilantro (I usually chop 1/4 cup)
  • ½ red onion, chopped fine
  • 1 clove garlic, minced  (I always put 2 cloves)
  • ¼ Cup red wine vinegar or balsamic vinegar
  • ½ Cup olive oil
  • 3 – 4 red tomatoes, diced medium-small
  • 1 avocado, diced medium-small
  • 1 can of corn, drained
  • Salt and pepper to taste

Mix all ingredients together and enjoy!
