When in Distress, Eat Dessert!

Partially eaten Apple CrispThe financials have been put to rest until the end of the month. I didn't email the details because they can be boring. If you're interested in our expenses so far this year, however,  previous posts are listed down a bit on the left side of this page. It’s true that, although not very exciting, they still give the cruising dreamer a good idea of actual costs of cruising and buying a boat. It can be very depressing on paper. So what can we do to lift our spirits and make ourselves happy? Eat dessert! **Jim made a very rude comment about what the photo looks like, but I forgot to take a picture BEFORE I served, so you get to look at my plate after I already dug in. Sorry.**

Jim’s favorite dessert is cherry pie. But since Father’s Day is coming up and he’ll get one then for sure, we’ll make an apple dessert instead. This recipe was given to me by Ann Brown on s/v Hana Crew. I made it for a potluck and before I could scoop the only helping I got onto my plate (the last of which was in the bowl), the offspring "vultures" surrounded me and looked greedily at my plate while shamelessly drooling. I think if I hadn’t been armed with a fork and a fly swatter that I would have had my dessert confiscated and devoured. It’s very tasty, and while it isn’t real conservative with propane and can heat up the cabin, a scoop of vanilla ice cream on the side from Bing’s here in Mazatlan makes "sweating it out" all worth while!

APPLE CRISP - s/v Hana Crew, Ann Brown

  • 6 cups (6– 8) apples - cored, peeled & cut small chunky - (you can substitute blueberries, too!)
  • 2 Tablespoons flour
  • ½ Cup sugar (I used brown sugar, but white is fine)
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt

Mix all ingredients together. Place in 2 quart casserole. Sprinkle with Crisp Topping (below). Bake at 375 degrees F until bubbly, about 45 minutes.

THE TOPPING:

  • 1 Cup flour
  • 1 Cup brown sugar (1/2 light; 1/2 dark - but I use whatever I have)
  • ½ Cup butter (1 stick)
  • ½ Cup oats

Mix together dry ingredients. Cut in butter until crumbly.
