Carrot Cake Recipe

My 45th birthday... I usually don't want cake on my birthday, but this year was an exception. I was jonesing for a carrot cake and my birthday was a perfect excuse to make one. Carrots are usually found in abundance on the Baja, so finding the ingredients was a piece of cake, too. The hardest part is grating the carrots... oh, how I miss my food processor! But I have kids on board... slaves of the grater. This is a super easy homemade carrot cake recipe that is perfect for RV's and boats mainly because you only have to use one bowl. Easy clean up with delicious results!

Grease and flour a 9x13 pan. Preheat oven to 350*.

  • 2 ¼ C Flour
  • 2 t Baking soda
  • 1 t Salt
  • 1 C Coconut
  • 2 C Sugar (if at high altitude, then 1 ½ C)
  • 2 t Baking powder (if at high altitude, then 1 ½ t)
  • 2 t Cinnamon
  • 1 C Raisins
  • 3 C Carrot, grated
  • 1 ¼ C Oil
  • 4 Eggs
  • 2 t Vanilla
  • ½ C Chopped pecans or walnuts
  • Cream Cheese Frosting

Combine the first seven ingredients and mix well. Add the raisins, carrot, oil, eggs, vanilla and nuts. Mix until combined. Pour into pan. Bake for 50-60 minutes until toothpick comes out clean. Cool in pan.

 

Cream Cheese Frosting

(makes about 1 ½ cups)
 

  • 8 oz. Cream Cheese (room temp)
  • 3 C powdered sugar
  • 1/3 C butter, melted

Beat cream cheese until smooth. Gradually add sugar and butter. Mix well until creamy. Frost cake in pan.
