Rollo de Mar
One of the most delicious dishes we splurged on was the Rollo de Mar at Kato's Restaurant on the beach in La Manzanilla. The fresh snapper fillet is rolled around a generous portion of shrimp and octopus, wrapped in bacon and then slathered in a rich, creamy almond sauce. It was absolutely divine!
Shawn and Heather mention it in their Pacific Mexico cruising guide. It sounded so good that Jim and I had to try it. We weren't disappointed. And it was evident that the fish was really fresh. Local folks came in droves to the next door fish co-op and purchased their whole red snapper. I was tempted to buy one myself, but the gringo price was quite a bit more. That happens frequently in Mexico. No worries; just say no. I love the photo of the two men on the back of the motorbike with their fish!
